Momo with Tomato Soup

Momo with Tomato Soup

INGREDIENTS:
Filling:
  • 300g minced beef
  • 4 spring onions, finely chopped
  • 1 tbsp tomato puree
  • 1 green chilli, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tbsp root ginger, finely chopped
  • 1 tsp soy sauce
  • 1 tbsp vegetable oil
Wrappers:
  • 150g/ 1 1/4 cup plain flour
  • 50ml/ 1/4 cup boiling water
  • 25ml/ 1/2 tbsp cold water
  • 1 1/4 tsp vegetable oil
Sift the flour into a bowl and add the boiling water. Add the cold water and the oil and mix well to form the dough. Knead well until smooth and divide into 16 pieces. Roll out to for little dough disks. Place all the filling ingredients in a bowl and mix together thoroughly with your hands. Take each of the dough disks and place a little of the filling in the middle. Wet the edges and then bring together to make a little pocket. Steam for 10 minutes, either over boiling water or the tomato soup Tomato Soup Just a simple tomato flavoured broth.  The main flavour should come from the momo’s and so the soup is just a background taste.
  • 5 or 6 tomatoes, roughly chopped
  • 1 green pepper, de-seeded and roughly chopped
  • 1 tbsp tomato puree
  • sea salt to taste
  • black pepper to taste
Wait until the water begins to boil and add the tomatoes, green pepper and puree.  Leave for 10 minutes for the flavours to go into the water.  Add salt and pepper to taste. Use the boiling soup to steam the momo’s with.  Place the momo’s in a bowl and pour over a ladle of the soup to serve.
