Oatmeal White Chocolate Butterscotch Cookies
INGREDIENTS:
- 1.5 cups whole-wheat flour (white works fine too)
- 1 tsp baking soda
- 4 packets of stevia
- cinnamon to taste
- 3/4 cups packed light brown sugar
- 1 cup water
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 2 cups dry old-fashioned oats
- 1/2 cup white chocolate chips
- 1/2 cup butterscotch chips
DIRECTIONS:
In a large bowl, combine the flour, baking soda, stevia, and cinnamon and set aside
on the stove, bring 1/2 cup of water to a boil and stir in the brown sugar so that it dissolves.
Remove from the heat and stir in the applesauce and vanilla.
Once cool, combine this mixture with the first bowl.
In another bowl, combine the oats with 1/2 cup of water, allowing the oats to soak up most of the moisture, then add this to the first bowl. You may need to add another 1/2 cup of water here if the dough is too dry.
Lastly, add the chocolate chips.
On a greased pan, scoop out the dough in tablespoon-sized balls and arrange at least an inch apart. bake for 10-12 minutes at 350 degrees. Allow the cookies to cool slightly before moving them to a separate dish.
