Plum-Raspberry Blintzes
INGREDIENTS:- 1 chopped plum
- 1/4 cup granulated sugar
- 1 tsp cornstarch
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 1 egg
- 3/4 cup cottage cheese
- 2 tbsp sugar (or sugar substitute)
- 1/2 tsp vanilla
- 4 nine-inch crepes (prepared or bought)
- 1/3 cup raspberries
- confectioners’ sugar
- In a large bowl, toss the chopped plum with the granulated sugar, cornstarch, cinnamon and salt. Microwave for three minutes, then stir and set aside.
- Puree cottage cheese in a blender with the egg, sugar and vanilla. Spoon onto the center of the crepes; fold in the sides and roll up.
- Cook seam-side down in a nonstick skillet with butter until golden on both sides. Dust with confectioners’ sugar.
- Stir raspberries into the plum sauce; spoon over the blintzes.
