Whole wheat couscous with roasted veggies
INGREDIENTS:- 1/2 cup water
- 1/4 cup whole wheat couscous
- 1/2 cup zucchini, sliced into rounds
- 1/2 cup yellow squash, sliced into rounds
- 1/2 cup red pepper, cut into strips
- 1/2 cup broccoli florets
- salt and pepper to taste
- 2-3 tbsps lemon juice
- 1 tbsp fresh chopped basil
- Bring water to a boil in a small saucepan, then add couscous. Stir a bit, then remove from heat. It should only take about 5 minutes for the couscous to cook after that!
- Preheat your oven to 375 degrees, then toss veggies in a baking sheet with salt, pepper, and some olive oil if you’d like. Roast for about 25-30 minutes depending on your oven.
- Mix veggies with couscous, adding more salt and pepper if necessary. Add in basil and then lemon juice, mixing thoroughly!
