Shrimp Scampi Pasta

Shrimp Scampi Pasta

INGREDIENTS:
  • 1/2 lbs shrimp peeled and deveined
  • 4-5 cloves garlic
  • 1-2 shallots
  • Olive oil
  • 2-3 tsp butter (to taste)
  • 1 lemon
  • A couple splashes of dry white wine (aprox 1/8 - 1/4 cup)
  • Parsley
  • Pasta
  • Salt and pepper to taste
DIRECTIONS:
  1. Cook pasta according to instructions
  2. Heat olive oil in a large pan. Briefly cook garlic and shallots until fragrant, but do not let it brown
  3. Toss in shrimp, turning once until pink and firm 
  4. Push shrimp to the side of the pan  (so it doesn’t over cook). Melt in 2-3 tsp of butter and add a generous glug of white wine
  5. Squeeze lemon juice. Stir sauce to combine and reduce 
  6. Add in chopped parsley, and cooked pasta
  7. Toss well to combine so that sauce coats noodles. (Do not leave it too long over heat or the parsley will wilt and sauce will thicken too much)
  8. Serve immediately
