Shrimp Scampi Pasta
INGREDIENTS:- 1/2 lbs shrimp peeled and deveined
- 4-5 cloves garlic
- 1-2 shallots
- Olive oil
- 2-3 tsp butter (to taste)
- 1 lemon
- A couple splashes of dry white wine (aprox 1/8 - 1/4 cup)
- Parsley
- Pasta
- Salt and pepper to taste
- Cook pasta according to instructions
- Heat olive oil in a large pan. Briefly cook garlic and shallots until fragrant, but do not let it brown
- Toss in shrimp, turning once until pink and firm
- Push shrimp to the side of the pan (so it doesn’t over cook). Melt in 2-3 tsp of butter and add a generous glug of white wine
- Squeeze lemon juice. Stir sauce to combine and reduce
- Add in chopped parsley, and cooked pasta
- Toss well to combine so that sauce coats noodles. (Do not leave it too long over heat or the parsley will wilt and sauce will thicken too much)
- Serve immediately
