Red Pepper Quinoa
INGREDIENTS: Serves 1- 3/4 cup quinoa, rinsed
- 1/2 onion, diced
- 1/2 red pepper, diced
- Olive oil
- Salt
- 1 cup water
- Heat oil in a wok or saucepan with a lid on high heat. Add onions and cook until translucent, about 5 minutes.
- Add red peppers and stir briefly. Add quinoa and mix to toast lightly. Add water, and cover, reducing heat to medium.
- Cook for 15 minutes, or until water has been fully absorbed. Fluff with fork, and serve warm.
